BANANA BUTTERSCOTCH PUDDING
(Taken from Simply Bill, Bill Granger)
125g plain flour
Pinch of salt
115g castor sugar
3 teaspoons baking powder
1 banana, mashed
250ml milk
85g unsalted butter, melted
1 egg, lightly beaten
1 teaspoon natural vanilla extract
Topping
140g soft brown sugar
3 tablespoons golden syrup
Preheat the oven to 180’C. Sift the flour, salt, sugar and baking powder into a bowl. Add the banana, milk, butter, egg and vanilla and whisk together well. Pour into a greased 2 litre baking dish and put the dish on a baking tray.
To make the topping, put the brown sugar, golden syrup and 250ml of boiling water in a small saucepan and bring to the boil. Pour carefully over the pudding, then bake for 30-40 minutes or until cooked through when tested with a skewer. Serve with vanilla ice cream or cream.
